Rats, Cats, bats and Trout
Madeira is a remote island and as a result of that has a large number of endemic species and are at risk from invasive species
like the Banana passion fruit.
So what is most a risk, birds, plants, fungi, Invertebrates ?
Their is no native fresh water fish on Madeira but their are about 500 endemic Invertebrates Many of them will be fresh water species. They have never been exposed to fish predation,so they will not cope well, so why introduce Trout (rainbow and brown).
But hay they have a management plan, unlike the endemic Bat, ah but maybe the bat is about to lose some of its food source, so weakened they can’t get away from the rats and cats. The trout are now breading in the head waters, all the rivers are linked together by the Levadas.

“With a chemical spill, you could theoretically recover all the molecules,” says entomologist May Berenbaum of the University of Illinois. “With a biological organism that reproduces, once it’s out there, it’s out there. You can’t round it up.”

8th Course: “Passionfruit”

Passionfruit chibouste topped with passionfruit seeds and a verjus-stewed gooseberry.

Notes: This one really confounded me.

First, the placing of this between two meat courses was a bit odd – especially after my palate had been amply cleaned and distracted by a nice clean and simple tomato salad.

Second, this course, much like the yuzu the day before, needed a bit of sweetening. The passionfruit seeds on top really dominated the show, in taste. Any passionfruit flavor in the chibouste was lost on the seeds.

My favorite element was the gooseberry, which had been stewed in verjus. It added a nice sweetness, flavor contrast, as well as textural softness against the gritty bite of the passionfruit seeds.

Lastly, the sorrel leaves on top also confused me. While Chef Racicot is right in observing that they have a naturally ascorbic acidic flavor, in this dish, the tasted almost savory and meaty, which was strange. I didn’t care for it.

Overall, this course would have been better had the custard been a touch more sweet and had more flavor. Also, I’m just not convinced that it fit between two savory meat courses.
